There is an option to change SMS conversations from bubble to stripes. This doesn't do anything though (on any of the releases). Can I make my conversations look similar to that of the Iphone (bubbles)?
However, it doesn't look like the iPhone SMS application. There is a third party application by Empower that will give you that look. You can try that and see if it suits your needs.
