n00b question: How do I know which version OS I have on my Pearl and if there's a new one available, how do I go about downloading and installing?

Your version on your device: Options > About.

The latest version available for your 8100:

Always, we keep the latest version available for each device, in the Sticky Notes at the top of each model section.

Ok, I did all that. Now my Desktop Manager can't recognize my Pearl at all.

Doing the above would not hinder your PC's ability to recognize your Pearl.

On your BB, remove the battery while powered on, replace and reboot.

Reboot your PC. Reconnect the USB to the BB, and open Desktop Manager.
