The display size of the 8700 is 320 x 240 pixels. That means you'll need to get images at least that big (in pixel dimensions) and resize them by scaling and cropping to get 320x240. If you try to scale up smaller images, they may not look good because the quality of the 8700 display will reveal the noise and artifacts just as good as the part of the image you want to see.
Like others noted, Photoshop (any version) and many other applications for image editing will work. Save them as *.jpg files and compress them to be about 25K to 35K for a nice quality without too much extra storage space. If you have a lot of one color in a large area, like black, the image size will be a lot smaller as a result of the compression algorithm.
