Default Baselining BES

I'm planning on optimizing my current environment. Moving MDS Connection and Attachement to seperate machines among other things.

What is the best way to create a baseline in order to demonstrate how the changes have affected the environment?

I'm planning on using MS System Monitor. Should I average week, month worth of stats?

Please share some of your experiences/ideas.
