Welcome to the forums!
1. Go to the "Manage Internet E-Mail icon. You should see a link titled "Service Books". Select this, and you you should see a second link titled "Send Service Books". This will re-send the Service Books to your device. You shouldn't need to delete your current Service Books.
2. Talk to your carrier about your 3rd party apps. The may have some restrctions on what you can add.
3.If you follow the steps in item 1, you should be OK.
4. Your Desktop Manager has a Backup and Restore option. Always a good idea to have a current back up stashed on your computer somewhere, but it really isn't required to resend your Service Books.
